Just any sicilian wife has his own recipe for the arancine (or arancini), fried rice balls coated with breadcrumbs, usually filled with ragů (meat sauce), tomato sauce, mozzarella cheese, and peas. The name derives from their shape and color, which remembers the form of an orange, typical fruit of Sicily. In italian arancina means "little orange".
Arancini can be of several tastes: con burro (béchamel sauce), con funghi (mushrooms), con pistacchi (pistachios), or con melanzane (aubergine (eggplant)).
